Founder Jack Gibson began the company in an old, abandoned gold mine in Cedar Ridge in 1999. He used the concept of aging products in mines and transformed the mine into an ideal aging facility for his blue cheese. The company has since moved to Roseville, but the blue cheese is still mine aged for at least one year.
