Just north of the French border lies the small village of Chimay, where Trappist monks began producing cheese and ale in 1862. The Chimay Grand-Cru is aged for six weeks which lets the all natural rind develop a flowery odor. The cheese itself is flavorful, creamy and fresh, semisoft in texture and excellent with beer.
