One of Switzerland's oldest cheeses, dating back to the fifteenth century, this cheese can simply be referred to as Fribourgeois (pronounced: Free Booj wha).
It comes in 15.5 to 20 pound wheels, and has a soft, smooth consistency.
From the same region where Gruyère is made, it is comparable in taste, though Fribourgeois tends to be slightly more moist because it is pressed, and not cooked.
