It originated in Bologna, Italy, hence its Americanized name, but is made extensively in the Emilia-Romagna region, and its has Protected Geographical Indication (PGI) under European Union law.

Flecked with small melt-in-the-mouth chunks of fat, bright green pistachios, seasoned with pepper and garlic, Mortadella is an integral ingredient in the famous New Orleans sandwich, the Muffuletta. A great hot sandwich treat, fried, with melty cheese. That’s a bologna sandwich!
