Manchego, made from sheep's milk, is Spain's most popular cheese, and is strictly name-controlled. It is produced in Central Spain's La Mancha region, a territory known for its fierce winds, violent temperature swings and desert-like aridity. This extra-aged Manchego is aged for a minimum of 8 months, giving it a sharp, nutty flavor and a firm, slightly brittle texture.. We especially love this cheese served with Membrillo (Spanish Quince paste) for a traditional Spanish treat.
