A fresh, young, snow-white cheese that is creamy and comparable to American cream cheese in it's first week or so. As it ages, moisture will begin to escape and the "rind" will start to form with a light reddish-orange tint. The cheese becomes slightly crumbly, and the flavor more pronounced.
