Domaine Robert Chevillon Bourgogne Passetoutgrains 2009 $25 The Domaine Chevillon is one of the greatest in all of Burgundy, specifically the village of Nuits-Saint-Georges. Good vintage or poor vintage, this domaine produces excellent wines of terroir and clarity, representative of the vintage. In an excellent vintage, such as 2009, I like to look toward their lesser wines on the village and appellation levels. Their Passetoutgrains (literally meaning pressing of all grains and in this case the two red varieties in Burgundy) is a pressed blend of Pinot Noir and the lesser Gamay Noir. Usually a red wine, occasionally a rosé, Passetoutgrains is excellent French country wine...what you would find at the table of a vintner at lunch. It is usually light, yet in hotter vintages such as 2009 can display greater intensity, grip, and character -- characteristics of wines from greater terroir. Look for notes of strawberry, raspberries, and mineral on the palate. It is excellent with lighter grilled meats, and, not surprisingly, pairs well with cheese.
Abbaye de Bel'loc Sheep Basque $30/lb Made at the Abbaye de Notre Dame at Bel'loc, this Basque sheeps milk cheese is one of the most popular cheeses we carry on a regular basis. It is higher in fat than most sheep cheeses, which creates a sweet nuttiness that is extremely smooth on the palate. The milk comes from Manech Ewes that have been local to the abbey for centuries.
Something Sweet... Sqirl Seascape Strawberry & Rose Geranium $14 Wonderful ripe strawberries from the central coast of California with the aromatics of Rose Geranium. Seascapes are one of my favorite varieties of Strawberry because they are small and meaty. They create an excellent jam that pairs exceedingly well with the flavors of this wine and cheese.
