Truffles are a fruiting body of subterranean fungi from the genus tuber. A tuber is the swollen region of an underground stem or root, usually modified for storing food. Interestingly enough, even though truffles are a fungi, they are more similar to a potato than to a mushroom, which they are commonly associated with. White truffles are only available a few months out of the year, from late fall to mid-winter making them rare and most dear. White truffles are found almost exclusively in Italy. Ours are from Le Marche. In addition to fresh truffles, there are other forms available, however, most chefs will agree there is no substitute that equals that of a fresh truffle!
