Though cheeses similar to Roquefort are produced elsewhere, European law dictates that only those cheeses aged in the natural Combalou caves of Roquefort-sur-Soulzon may use the name Roquefort. Being and aoc cheese there are strict regulations regarding how and where it can be produced. Crumbly and tangy, this cheese has a distinctive taste that is by no means subtle.
