Testun means "stubborn" in it's native dialect, and has been named such due to the difficulty to age it correctly.
aged in caves like the other Testun, this variation has the same base notes to it's taste, however, the aging process is finished by soaking the cheese in oak kegs with the must of the Nebbiolo grapes that are used to make Barolo wine. The result is delicate fruity taste from the must which gives this cheese an extraordinarily rich and complex flavor.
