With a striking resemblance to a hockey puck (shape and color!) this mild and creamy goat pairs well with sweet fruits or a glass of white Sancerre. Shaped like a disk (referred to as a rond) it typically measures 1 inch thick, 3 inches in diameter and weighs 4 to 6 ounces. Like many other goat cheeses from the Loire Valley (and France in general) the outside of the cheese is ashed. Typically the process of cindering the cheese encourages the inside cheese to ripen, and creates a visual contrast between the dark outside, and pale inner pâte. Delicious.
