Grechetto is one of my absolute favorite Italian white varietals. It is grown primarily in the provinces of Lazio and Umbria. This particular example is from Umbria in the area of Colli Martani, one of the premier growing areas for this varietal where it is often blended with a touch of Trebbiano for the local wine.
The wine is organically minded and bio-dynamically farmed. Purveyor Roberto DiFilippo believes anything that could possibly harm himself or his vineyard workers have no place in winemaking. He believes wine is a natural product to be treated with respect and not chemicals.
This wine is perfect for a Roman afternoon meal of salad, locally fried fish with bitter fresh greens, pasta Cacio e Pepe or perhaps some stuffed fried olives.
Cacio Di Roma
$30 per pound
Perfect as a table cheese or grated over some pasta, this classic cheese of Rome is soft and elegant yet pungent. It is slightly sweet with a light lemon note.
