Le Petit Caboche is a wonderful Sauvignon made by a guy who makes really great Châteauneuf du Pape. Boisson's Le Petit Caboche is not over complicated but simply delicious. It lacks the robustness that white wine from the southern Rhône can often have, which is good in this case, because the wine is light on the palate and tastes like a Sauvignon grown in Châteauneuf's rocky soils. Aromatic, with a fierce mineral streak, this wine tastes great with a slight chill and grilled shrimp or a little cheese.

This is one of my favorite cheeses for the spring. Its delicate, light and crisp, enhanced by the local herbs: rosemary, fennel seeds, juniper berries, and red chilies. Absolutely fantastic by itself or melted in a grilled cheese sandwich with a little olive tapenade.
