This week, in honor of the start of the White truffle season, we're recommending All Things Alba:
When I think of truffles, especially white ones, there are a few things that come to mind. Champagne, Burgundy, Barbaresco and, of course, Barolo. In our ode to Alba, we are talking probably one of the greatest and most serious producers of Barolo, Aldo Conterno. Located in the heart of the Barolo district in Monforte d'Alba, Conterno makes some of the best wines in the region, mostly traditional in style with flashes of some new wave innovations a la Angelo Gaja.
All the fruit (100% Nebbiolo) for this wine is sourced from vines that are at least 20 years old. The wine is complex, drinking well now but would surely be helped by another 10-15 years of cellar aging. It is also an opportunity to own a classic wine made by one of the masters of Piemonte. Aldo, who started this winery in 1969, passed away earlier this year, marking the end of his tenure at the helm of the estate. May the great man rest in peace!
Testun al Barolo
Cow and Goat
Staying in Alba, we are featuring a cheese that literally is saturated in Barolo. Testun is a wonderful cheese that is aged for at least four months in old wine barrels, covered in Nebbiolo pomace. The result is a slightly sweet cheese that has hints of blueberry yogurt. I recommend it before a meal. But for dinner, how about some fresh Tagliatelle with white truffles?
Something to shave...

That's right...they're back! Our favorite parasitic potato! Here for a limited amount of time, as you know. Swing by and grab a few to shave on scrambled eggs, pasta or some creamy risotto. Mangia bene!
