A fantastic wine from a fantastic property. A project of the Perrin family from Chateauneuf-du-Pape (Château Beaucastel) and Robert Haas of Vineyard Brands. Their goal is to farm sustainably and make the best wines in Paso. All of their wines are made from Rhône varieties including this Vermentino which is called Rolle in France. The varietal is widely planted in the Mediterranean with plantings in Corsica, Sardegna, Tuscany, Liguria, and Piemonte.
Vermentino is a late ripening varietal. It has plenty of structure and reacts well to a multitude of winemaking styles. This one from Paso Robles is obviously on the richer side but is completely balanced and excellent with cheese and more substantial grilled fish dishes.

Made by Soyoung Scanlan at her dairy in Petaluma, California. It is pure sheeps milk, earthy and rich with a slight amount of sweetness. It is also aged in molasses creating a unique smell on the rind and keeping the cheese moist on the inside. And now for something really really spicy....
